While today is the winter solstice, it is most definitely soup weather, but then in my opinion every day is soup weather. I found this title on quite a few vegetarian food blogs. I placed a hold for it at the library and waited.
If I had known it was this good I don’t think I could have.
I love the easy intro and I feel the passion and easy approach she takes to cooking. I love that she asks you to take these as inspiration and tweak them to be your recipes. I love that there aren’t photos to discourage you. That she reminds us soups are easy. That there is an emphasis on fresh seasonal produce.
And what I really love?
A gluten free cream of mushroom soup (p76) and a no onion vege broth (for my husband who thinks onions are icky).
Update:
I made white bean and garlic soup with greens and we loved it.

Adding it to my list! Any good ideas for a soup to feed my Christmas Eve crowd? I’m making butternut squash soup for dinner the next day, but I cannot decide what to make for my open house!!
Oh–i made soup for myself for dinner (vegetarian even!) Carrot ginger soup–
2 lbs of carrot, (sliiced or chunked)
2 fingers of ginger (thumb sized)
boil till tender (do not drain)
remove about 1 cup of carrots (chop coarsely)
add broth (about 3 cups) water (also 3 cups)
chop 1 onion, saute till tender(i use butter, but …)
use blender or imersion blender to puree carrot and onions
season with
vinagar (or sour salt, or lemon juice) i used sour salt
salt pepper, and some nutmeg (not too much!)
Add reserved chopped carrots.
cook till flavors have set (about 20 minutes at a bare simmer)
(if desired, finish with 1/4 cup cream) stir well
garnish with more sauteed onions–(cooked till well caramelized)
(and right now, i have more soup (potato onion) cooking for tomorrow (and later in the week, and next week)
Next, onion soup, (and then lentil . and then. ) love hot soup on a cold winter night!
